Free and Easy Chili Recipe |
Chili Recipe Ingredients:- 2 lb Beef Chuck - cut into 1/2 cubes
- 8 tablespoons Olive Oil
- 5 tablespoons med-hot Chili Powder
- 1 lb Spanish Chorizo Sausage sliced
- 3 medium Onions - chopped
- 8 Garlic Cloves
- 1 tablespoon Oregano - Mexican
- 2 teaspoons Cumin - ground
- 2 teaspoons Salt
- 1 teaspoon fresh Ground Pepper
- 4 lb canned Italian Plum Tomatoes
- drained and chopped
- 24oz Beer - Mexican
- 6oz Tomato Paste

Chili Recipe Instructions:- Toss meat with 3 tablespoons of olive oil and 2 tablespoons of chili powder in mixing bowl.
- Leave in the refrigerator overnight.
- Heat 3 tablespoons of oil in large heavy skillet over medium heat.
- Make sure you brown the meat all over do in batches if needed about 5 minutes.
- Transfer to a large pot using a big slotted spoon then add chorizo to skillet and brown.
- Now transfer to pot using slotted spoon and turn heat to med-lo.
- Add more oil to skillet if needed then add onions and then cook until translucent for about 10 minutes.
- Add garlic, chili powder, oregano, cumin, salt and pepper and mix for about 3 minutes then transfer to pot.
- Stir in tomatoes, beer and tomato paste. Bring to a boil then reduce heat.
- Cover and simmer until meat is very tender, stirring occasionally for a about 3 hours.
- Remove the lid during last hour if necessary to thicken liquid into sauce.
- Remove from heat and allow to cool slightly before serving.
