Carrot Cake Recipe

Carrot Cake Recipe Ingredients:
  • 4 Eggs
  • 1 cup Oil
  • 2 cups Flour
  • 2 cups Sugar
  • 2 teaspoons Cinnamon
  • 2 teaspoons Baking Soda
  • 4 cups Carrots
  • 2/3 cups chopped Nuts
  • 1 cup Golden Raisins
  • 3  8oz packages Cream Cheese
  • 3 cups sifted Powdered Sugar
  • 1 teaspoon Vanilla

Carrot Cake Recipe

Serves: 10

Carrot Cake Recipe Instructions:
  • Heat oven to 350 degrees then grease and flour 2 - 9 inch round pans.
  • Take a large mixing bowl and beat eggs until foamy
  • Add oil in slowly and beat well.
  • Combine flour, sugar, cinnamon & soda together and add to egg mixture and stir well.
  • Fold in carrots, nuts and raisins and tip into prepared pans and bake 30-35 minutes or until golden brown.
  • leave to cool for 12 minutes in pan then invert on wire rack to cool.
  • Mix cream cheese until smooth. Add powdered. sugar and mix thoroughly. and stir at high speed until smooth.
  • Spread evenly on cake and let set.
Carrot Cake Recipe Cooking Time:
  • Cooking time 35 min.
  • Leave to cool before serving.
Carrot Cake Recipe Serving Instructions:
  • Serve with Whipped Cream, Double Cream.
  • Great with Coffee.
